Step 1
First, prepare 5 fresh eggs and a handful of chives for your dish. Rinse the chives thoroughly under running water, drain them, and finely chop them into approximately 1cm pieces.

Crack the 5 eggs into a bowl. Add 1 tablespoon of water for each egg (a total of 5 tablespoons). Sprinkle in 1/2 teaspoon of salt to season. Adding a little water will make the eggs softer and more moist.

Using a whisk or chopsticks, beat the egg mixture until the salt is dissolved and the yolks and whites are well combined. Beat until the chalazae (the white, stringy bits) are broken down.

Now, let’s start cooking. Heat a pan over medium heat and add a generous amount of cooking oil. Swirl the oil to coat the entire surface of the pan.

Once the pan is sufficiently hot, slowly pour the beaten egg mixture into the pan, starting from the edges. As the egg begins to set and form soft curds, gently stir it with chopsticks or a spatula to cook. Avoid stirring too vigorously to maintain a tender texture.
