Dressing Ingredients- 2 Tbsp Gochujang (Korean chili paste)
- 1 Tbsp Mirin (or cooking wine)
- 1 Tbsp Maesil Extract (plum extract)
- 1 Tbsp Gochugaru (Korean chili flakes)
- 1 tsp Minced Garlic
- 1 Tbsp Toasted Sesame Seeds
- 1/2 Tbsp Vinegar
- 1 tsp Sugar
- 2 Tbsp Gochujang (Korean chili paste)
- 1 Tbsp Mirin (or cooking wine)
- 1 Tbsp Maesil Extract (plum extract)
- 1 Tbsp Gochugaru (Korean chili flakes)
- 1 tsp Minced Garlic
- 1 Tbsp Toasted Sesame Seeds
- 1/2 Tbsp Vinegar
- 1 tsp Sugar
Cooking Instructions
Step 1
Rinse the salted Kkosiraegi thoroughly under running water to remove excess salt. Shake off the excess water and set aside. Repeat rinsing 2-3 times for best results.
Step 2
Bring a pot of water to a rolling boil. Blanch the rinsed Kkosiraegi for about 30 seconds to 1 minute. Be careful not to overcook, as it can become mushy. Immediately drain and rinse under cold water to cool. Soak the blanched Kkosiraegi in cold water for about 5 minutes to achieve a crisp texture.
Step 3
In a small bowl, combine all the dressing ingredients: Gochujang, Gochugaru, Maesil Extract, Mirin, minced garlic, sugar, vinegar, and sesame seeds. Mix well until the dressing is smooth and ready to use.
Step 4
Prepare the vegetables by julienning the onion, carrot, green onion, and bell pepper into thin strips, similar in length to the Kkosiraegi. Feel free to use any other vegetables you have on hand.
Step 5
Drain the Kkosiraegi well and cut it into bite-sized pieces, about 3-4 cm long. Place the cut Kkosiraegi into a large mixing bowl. Add all the prepared julienned vegetables to the bowl.
Step 6
Pour the prepared dressing over the Kkosiraegi and vegetables. Gently toss everything together with your hands, ensuring the dressing coats all ingredients evenly. Mix gently to avoid mashing the ingredients.
Step 7
Sprinkle the toasted sesame seeds over the salad for an extra nutty aroma and flavor. For a stronger nutty taste, you can lightly crush the sesame seeds before adding them.
Step 8
Transfer the finished Kkosiraegi salad to a serving dish. This vibrant and flavorful salad is a perfect accompaniment to any meal, offering a delightful balance of sweet, sour, and spicy tastes.
