Core Ingredients

  • 1 packet of ramen noodles
  • 8 clams (manila clams recommended)
  • 3-5 shrimp, peeled and deveined
  • 1 handful of shredded scallions (for garnish)
  • 1/3 onion, thinly sliced
  • 1 Korean green chili pepper, thinly sliced
  • 1/4 large leek, thinly sliced
  • 3 cups of water (approx. 600ml)
  • 1/2 Tbsp minced garlic
  • 1 Tbsp soy sauce (regular or light)
  • 1 Tbsp gochugaru (Korean chili powder)

First, prepare your seafood. Peel and devein the shrimp. For the clams, rinse them under cold water and soak them in salted water for about 1 hour to purge any sand. Gently swirl the water occasionally to help them release grit.

Next, prepare the aromatics. Thinly slice the onion. Finely chop the leek and the Korean green chili pepper. If you prefer less heat, you can remove the seeds from the chili pepper or use less of it.

Now, let’s build the flavorful broth base. Heat a generous amount of cooking oil in a pot over medium-low heat. Add the sliced leeks and sauté until fragrant, creating a leek oil. Once the leeks are aromatic, add the gochugaru, minced garlic, sliced green chili pepper, and onion. Stir-fry until the vegetables soften and become fragrant, releasing their sweetness.

Once the vegetables are nicely sautéed, pour the soy sauce along the edge of the pot; this helps caramelize the soy sauce for added depth of flavor. Turn off the heat temporarily, add the 3 cups of water, and bring it to a rolling boil over high heat. Once boiling, add the purged clams and the ramen noodles.

As the noodles cook, gently separate them with chopsticks to prevent sticking. When the ramen is about halfway cooked, add the prepared shrimp to the pot and continue cooking. Finally, garnish with the shredded scallions. Your delicious and refreshing seafood ramen is now complete and ready to be enjoyed!
