This summer had such a long rainy season, and now that it’s over, the late-season heat is really kicking in! On days like this, nothing beats a bowl of rice with some refreshing seasoned perilla leaves. My husband loves them, so I often make a batch. Today, I’m sharing photos and the recipe from the seasoned perilla leaves I made this week. It’s the perfect side dish for a hot day!
Main Ingredients- 100 fresh perilla leaves
- 1/2 green onion (scallion)
- 1 green chili pepper
- 1 red chili pepper
Perilla Leaf Seasoning Sauce- 100cc soy sauce
- 2 Tbsp chili powder
- 2 Tbsp minced garlic
- 4 Tbsp plum extract
- 2 Tbsp toasted sesame seeds
- 2 Tbsp oligosaccharide (for glaze)

Cooking Instructions
Step 1
First, prepare the perilla leaves. Gently untie any bunches and separate the leaves. Soak them in water with baking soda or vinegar for about 10 minutes, then rinse thoroughly under running water. Pat them dry with paper towels or place them in a colander to drain completely. Gently shake off excess water to ensure the seasoning adheres well.

Step 2
Now, let’s make the delicious seasoning sauce that will give the perilla leaves their amazing flavor. This sauce is soy sauce-based, ensuring a clean and savory taste. If you desire a deeper umami flavor, you can reduce the soy sauce slightly and add some fish sauce. Feel free to adjust the ingredients to your preference.

Step 3
Next, prepare the vegetables for the sauce. Finely mince the green onion, green chili pepper, and red chili pepper. These finely chopped vegetables will add wonderful depth and aroma to the seasoning. If you like, you can also add finely chopped onion or slivered red chilies for extra flavor and visual appeal.

Step 4
In a mixing bowl, combine the minced vegetables. Add 100cc of soy sauce, 2 Tbsp of chili powder, 2 Tbsp of minced garlic, 4 Tbsp of plum extract, 2 Tbsp of toasted sesame seeds, and 2 Tbsp of oligosaccharide. Mix everything thoroughly until well combined to create your delicious seasoning sauce.

Step 5
Finally, it’s time to season the perilla leaves. Place one perilla leaf at the bottom of an airtight container. Using a spoon, spread a thin layer of the seasoning sauce over the leaf. Place another perilla leaf on top, then spread more sauce. Repeat this layering process, carefully applying the sauce to each leaf, about 10 leaves at a time. Continue layering until all the leaves are seasoned, ensuring an even coating for the best flavor.
