Main Ingredients

  • 1/2 radish (approx. 700g)
  • 5 stalks of scallions

Seasoning

  • 1/2 Tbsp salt
  • 1/2 Tbsp minced garlic
  • 3 Tbsp rice water
  • 5 Tbsp olive oil

Cooking Instructions

First, thoroughly wash and peel half a radish (about 700g). Slice it thinly into matchsticks. Chop 5 stalks of scallions into 1cm pieces. Have 3 tablespoons of rice water ready. Using rice water helps to remove any harshness from the radish and makes it more tender.

In a bowl, toss the julienned radish with 1/2 tablespoon of salt. Let it sit for about 10 minutes to wilt. This process draws out moisture from the radish and allows the salt to penetrate, seasoning it evenly. After 10 minutes, you’ll see some liquid released from the radish. Don’t discard this liquid; it will be used when cooking the greens.

Heat 5 tablespoons of olive oil in a pan over medium heat. Add 1/2 tablespoon of minced garlic and sauté until fragrant. Blooming the garlic first will significantly enhance the overall flavor of the dish.

Once the garlic is fragrant, add the salted radish and 3 tablespoons of rice water to the pan. Stir-fry over medium-high heat briefly. Then, reduce the heat to low, cover the pan, and let the radish simmer gently until it becomes completely tender. Cooking with the lid on allows the moisture from the radish and the rice water to meld, creating a wonderfully moist and soft dish.

Check if the radish is tender and moist. If so, add the chopped scallions. Stir-fry for about 1 minute, just until the scallions are slightly wilted. Turn off the heat, cover the pan again, and let it steam for 2-3 minutes. This step ensures the scallions retain a slight crispness and their fresh aroma while allowing the flavors to harmonize. Your delicious seasoned radish greens are now ready!
