Seaweed Pesto Potato Stir-fry: A Side Dish Like a High-Class Korean Banquet
We’ve made a flavorful potato stir-fry using seaweed pesto as the seasoning.
Ingredients- 3 potatoes
- Cooking oil
- 1 Tbsp seaweed pesto
- Salt, to taste
- Chopped green onion
- Hemp seeds (or sesame seeds)
- 1/2 Tbsp olive oil
Cooking Instructions
Step 1
Peel the potatoes and rinse them thoroughly. Then, cut them into long, thin strips about 0.5 cm thick. Aim for uniform thickness so they cook evenly.
Step 2
Bring a pot of water to a boil. Blanch the julienned potatoes for about 1-2 minutes, just until they’re slightly tender. This step helps the potatoes maintain their shape and cook to a tender consistency when stir-fried. However, if you’re short on time or prefer a firmer texture, you can skip this blanching step and stir-fry them directly. (Tip: You can also soak them briefly in cold water and then stir-fry immediately without blanching.)
Step 3
After blanching, immediately rinse the potatoes under cold water to stop the cooking process and cool them down. Drain them well in a colander. Gently pat them dry with a paper towel to remove any excess moisture, as this will prevent splattering when you stir-fry them.
Step 4
Heat a frying pan over medium heat and add a generous amount of cooking oil. Add the dried potato strips and begin to stir-fry. Once the potatoes start to turn translucent, add 1 tablespoon of seaweed pesto. Stir-fry everything together until the potatoes are evenly coated with the pesto. The savory notes of the seaweed pesto will beautifully complement the mild flavor of the potatoes.
Step 5
Once the potatoes reach your desired tenderness, taste them and add salt as needed to adjust the seasoning. Be mindful that seaweed pesto can sometimes be salty, so it’s best to season gradually to achieve the perfect balance.
Step 6
Finally, add 1 tablespoon of chopped green onion and stir gently a couple of times just to combine. Turn off the heat immediately. The fresh aroma of the green onions will add another layer of deliciousness to the dish.
Step 7
Transfer the stir-fried potatoes to a serving plate. If desired, drizzle about 1/2 tablespoon of olive oil over the top for added sheen and a smoother texture. (Tip: I personally find that a light drizzle of olive oil enhances the overall mouthfeel, making it less dry. However, this step is entirely optional.)
