Rice Bowl Ingredients- 2 cups Rice
- 1 piece Mackerel (approx. 15cm in length)
- 2 Tbsp Grated Seaweed (or seaweed powder)
- Flour or Cornstarch, for coating
- Sesame seeds, for garnish
- Scallions, finely chopped, for garnish
- Salt, to taste
- Pepper, to taste
Orange Sauce Ingredients- 2 Tbsp Cooking oil
- 0.5 Tbsp Minced garlic
- 2/3 cup Water
- 2 Tbsp Oyster sauce
- 1 Tbsp Soy sauce
- 1 Tbsp Vinegar
- 1.5 Tbsp Sugar
- 3 Tbsp Orange juice
- 1 Tbsp Sesame oil
- Slurry: 1 Tbsp Cornstarch + 3 Tbsp Water, mixed well
- 2 pinches Red pepper flakes (for a hint of spice)
- 2 Tbsp Cooking oil
- 0.5 Tbsp Minced garlic
- 2/3 cup Water
- 2 Tbsp Oyster sauce
- 1 Tbsp Soy sauce
- 1 Tbsp Vinegar
- 1.5 Tbsp Sugar
- 3 Tbsp Orange juice
- 1 Tbsp Sesame oil
- Slurry: 1 Tbsp Cornstarch + 3 Tbsp Water, mixed well
- 2 pinches Red pepper flakes (for a hint of spice)
Cooking Instructions
Step 1
First, prepare the main star of your dish: the mackerel. Cut the mackerel into pieces about 15cm long. Grate the seaweed finely after rinsing it. (If you prefer convenience, you can use pre-grated seaweed or seaweed powder, and mackerel fillets.)

Rinse the rice thoroughly and place it in your rice cooker. Add the grated seaweed along with the usual amount of water for cooking rice. Cook using the standard white rice setting to achieve fluffy, delicious rice subtly infused with the aroma of the sea.

While the rice is cooking, carefully debone the mackerel pieces you’ve prepared. Fillet the fish into bite-sized portions. You can leave the skin on if you like. (Using pre-portioned mackerel fillets will make this step even easier.)

Lightly season the mackerel fillets with salt and pepper. Then, evenly coat each piece with a thin layer of flour or cornstarch. Coating the fish helps it achieve a crispy exterior when fried and allows the sauce to adhere beautifully.

Heat a frying pan over medium-low heat with a generous amount of cooking oil. Carefully place the coated mackerel pieces into the hot oil and fry until golden brown and crispy on both sides. Once cooked, remove the mackerel and let any excess oil drain off.

Now, let’s make the flavorful orange sauce. In a clean pan, heat 2 Tbsp of cooking oil over medium-low heat. Add the minced garlic and sauté until fragrant, being careful not to burn it. Pour in 2/3 cup of water, 2 Tbsp of oyster sauce, and 1 Tbsp of soy sauce. Stir well to combine.

Add 1 Tbsp of vinegar, 1 Tbsp of sesame oil, 1.5 Tbsp of sugar, and 3 Tbsp of orange juice for that refreshing citrusy kick. Bring the mixture to a gentle simmer, allowing the flavors to meld.

To thicken the sauce, gradually whisk in the prepared cornstarch slurry until you reach your desired consistency – a nice, glossy glaze. Stir in 2 pinches of red pepper flakes for a subtle hint of heat. Finally, gently add the pre-fried mackerel pieces and toss them lightly to coat evenly with the orange sauce.

Gently spread the freshly cooked, fragrant seaweed rice into your serving bowls. Try to fluff the rice so it doesn’t clump together.
