In a large bowl, crack the 8 eggs and beat them well, removing the chalazae (white stringy bits). Add the prepared seaweed to the eggs. If the seaweed strands are long, use kitchen scissors to cut them into bite-sized pieces. Mix everything together gently once more until well combined.

Season the egg and seaweed mixture with salt. While soy sauce or fish sauce can be used, adding only salt is best to preserve the beautiful green color of the omelet. Adjust the saltiness to your preference.

Heat a non-stick frying pan over medium heat. Lightly grease the pan with a small amount of oil and wipe it with a paper towel to create a non-stick surface. Once the pan is sufficiently hot, pour about half a ladleful of the egg mixture thinly and begin to roll it up. The uncooked egg mixture will naturally flow into the empty space, layering and encasing the roll, allowing you to create a thicker omelet. Don’t worry if it seems like a lot of egg – this technique builds the thickness. Cooking over medium-low heat ensures it cooks through without burning.

Once the thick egg roll is formed, move it to the edge of the pan. Gently roll it in various directions, cooking all sides evenly. Lightly pressing down on the sides and top as you turn it will help achieve a uniform shape and ensure the entire omelet is well-cooked.
