Main Ingredients

  • 3 thick slices of pork neck (about 2cm thick)
  • A pinch of salt for seasoning
  • A pinch of black pepper for aroma
  • 1 Tbsp olive oil for searing (using a tablespoon as a measure)
  • 10 cloves of garlic, thinly sliced

Sauce Ingredients

  • 2 Tbsp soy sauce (using a tablespoon as a measure)
  • 2/3 Tbsp oyster sauce
  • 4 Tbsp ketchup
  • 2 Tbsp sugar
  • 1 Tbsp corn syrup or honey
  • 1 Tbsp cooking wine (mirin or sake)
  • 100ml water
  • 1/2 Tbsp butter

Cooking Instructions

First, season the three thick slices of pork neck with salt and pepper. Heat 1 tablespoon of olive oil in a pan over medium heat. Sear the pork neck slices on both sides until golden brown and nicely browned. This is the first sear.

Now, let’s make the delicious steak sauce. In a bowl, combine all the sauce ingredients except for the water and butter: 2 Tbsp soy sauce, 2/3 Tbsp oyster sauce, 4 Tbsp ketchup, 2 Tbsp sugar, 1 Tbsp corn syrup, and 1 Tbsp cooking wine. Stir well until the sugar is dissolved to create a flavorful sauce.

Place the seared pork neck back into the pan. Pour the prepared steak sauce generously over the meat. The sauce will thicken and coat the steak beautifully. To prevent burning and to adjust the sauce consistency, carefully pour 100ml of water into the side of the pan.

Flip the pork neck steak occasionally to ensure the sauce penetrates deeply into the meat and allows it to simmer. Once the sauce begins to bubble, add the 10 thinly sliced garlic cloves over the steak. The aromatic garlic will infuse the steak with wonderful flavor.
