Prepare a pot for the kimchi stew. Heat 3 tablespoons of sesame oil over medium heat. Add 100g of pork and stir-fry until it’s lightly browned and has released some of its fat. This step helps remove any porky smell and adds a nutty depth of flavor.
Step 2
Once the pork is partially cooked, add 1 bowl of well-fermented kimchi (with its juice) to the pot. Break up any clumps of kimchi and stir-fry together with the pork for about 3-5 minutes, ensuring the kimchi is well coated with the sesame oil. This allows the kimchi to absorb the rich sesame oil flavor.
Step 3
After sautéing the pork and kimchi, pour in water to create the broth. You don’t need a separate broth; about 3-4 cups of plain water will do (adjust the amount based on the kimchi’s saltiness and your preferred consistency). The pork will contribute its own savory essence. For enhanced flavor, add 1 teaspoon of plum extract (for a touch of sweetness and to cut richness) and 1 tablespoon of fish sauce or soy sauce for seasoning. Taste and adjust the seasoning if needed, as kimchi varies in saltiness.
Step 4
Bring the stew to a rolling boil. Once boiling, add the 1/2 block of tofu, cut into bite-sized pieces. Also add 1 tablespoon of chopped green onion and 1 teaspoon of minced garlic. Give it a gentle stir to combine the ingredients.
Step 5
Reduce the heat to medium-low, cover the pot loosely (or leave slightly ajar), and let it simmer for about 10-15 minutes. The broth will deepen in color and flavor as the ingredients meld together. You’ll see a layer of flavorful oil on top, indicating the stew is reaching its peak. Cook until the broth has slightly reduced and all the flavors are well integrated.
