Main Ingredients
  • 1/2 Onion
  • 1/2 Bell Pepper (any color)
  • 1 Sausage
  • 1/2 Fish Cake sheet
  • 4 Eggs
  • 60g Mozzarella Cheese

Seasoning & Sauce
  • 1 Tbsp Minced Garlic
  • Pinch of Black Pepper
  • 2 Cups Tomato Sauce (paper cup measurement)
  • 1 Cup Water (paper cup measurement)

Cooking Instructions

Step 1

Begin by preparing all your ingredients. Dice the onion and bell pepper into bite-sized pieces, about 1cm cubes. Slice the sausage and fish cake into similar sizes. Having everything prepped beforehand will make the cooking process much smoother.

Step 2

Heat 1-2 tablespoons of cooking oil in a pan over medium heat. Add the minced garlic and sauté until fragrant. Be careful not to burn the garlic; once a gentle aroma fills the air, proceed to the next step.

Step 3

Add the diced onion to the same pan where you sautéed the garlic. Cook until the onions become translucent. Sautéing the onions first will enhance their natural sweetness and create a softer texture.

Step 4

Once the onions start to turn transparent, add the sliced bell pepper, sausage, and fish cake. Sprinkle in a pinch of black pepper to enhance the flavors of the ingredients, and stir-fry everything together until well combined.

Step 5

When the vegetables and sausage are partially cooked, pour in 2 cups of tomato sauce and 1 cup of water. Stir to combine the sauce with the ingredients. Bring to a simmer over medium heat, then reduce the heat slightly and cook for another 3-5 minutes to thicken the sauce to your desired consistency.

Step 6

As the sauce simmers, use a spoon to create small wells in the sauce. Carefully crack one egg into each well, trying not to break the yolks. The eggs will cook within the sauce, creating a beautiful presentation.

Step 7

After adding all the eggs, generously sprinkle the mozzarella cheese over the top. As the cheese melts, it will beautifully coat the eggs and sauce, adding a rich and creamy dimension to the dish.

Step 8

Reduce the heat to very low. Cover the pan with a lid and let it cook for about 5-7 minutes, or until the egg whites are set and the cheese is completely melted and slightly golden. You’ll know it’s ready when the cheese is gloriously stringy!

Step 9
