How to Make a Delicious Shiitake Mushroom and Bean Sprout Soup
A delightful combination of aromatic shiitake mushrooms and crisp bean sprouts! Introducing a recipe for a refreshing and deeply flavorful shiitake mushroom and bean sprout soup. It’s the perfect dish to warm you up on a chilly day!
Ingredients- 5 Dried Shiitake Mushrooms
- 1 pack Fresh Bean Sprouts (approx. 200g)
- 2 Concentrated Broth Cubes (or anchovy-kelp broth)
- 1 stalk Fresh Green Onion (approx. 20cm)
- 2 Tbsp Tuna Fish Sauce
- 1/2 Tbsp Minced Garlic
- 1/2 Tbsp Salted Shrimp (Saeu-jeot)
- A pinch of Salt (for seasoning)
- Water (as needed for broth or cooking)
Cooking Instructions
Step 1
First, soak the 5 dried shiitake mushrooms in lukewarm water for about 30 minutes until they become soft and pliable. Once rehydrated, remove the tough stems and slice the mushrooms into bite-sized pieces (about 1-1.5cm wide). These rehydrated mushrooms will add a wonderful umami and aroma to the soup.
Step 2
Pour water into a pot and add the 2 concentrated broth cubes. (If you don’t have these, you can use a broth made from anchovies and kelp, or simply plain water.) Once the water starts boiling, add the prepared shiitake mushrooms and simmer for about 5 minutes to extract their flavor.
Step 3
While the broth is simmering, prepare the seasonings to adjust the taste. Add 2 Tbsp of tuna fish sauce, 1/2 Tbsp of minced garlic, and 1/2 Tbsp of salted shrimp. Mix them well. Adding salted shrimp enhances the savory depth of the broth. We’ll use salt at the end to fine-tune the seasoning.
Step 4
Once the shiitake mushrooms have sufficiently infused the broth, add the 1 pack of thoroughly washed bean sprouts. To maintain the crispness of the bean sprouts, make sure to cover the pot with a lid and cook over medium heat for 3-4 minutes. Avoid opening the lid while the bean sprouts are cooking, as this can release an unpleasant smell.
Step 5
When the bean sprouts are fully cooked and their refreshing aroma rises from the soup, lift the lid and add the chopped green onion (about 20cm). Simmer for another moment after adding the green onions to further enhance the soup’s refreshing and clean taste. Finally, taste the soup and add a pinch of salt if needed to reach your desired seasoning. Your aromatic and refreshing shiitake mushroom and bean sprout soup is now complete!
