  • 1 pack Shiitake Mushrooms
  • 1 Tbsp minced garlic

Seasoning Ingredients

  • 1 Tbsp oyster sauce
  • 1 Tbsp soy sauce
  • 200ml water
  • A tiny bit of sugar
  • A little salt
  • 1/2 Tbsp black pepper powder

Cooking Instructions

First, wash the bok choy and shiitake mushrooms thoroughly under running water. Ensure you clean the stems of the shiitake mushrooms well, as they can sometimes have dirt.

Trim the very end of the stems from the cleaned shiitake mushrooms. Then, slice the mushroom caps diagonally to create an appealing shape. Aim for slices about 0.5 cm thick for even cooking.

Prepare all the seasoning ingredients in advance. Measuring out the soy sauce, sugar, oyster sauce, salt, and pepper powder will make the cooking process much smoother.

Bring a pot of water to a boil. Once boiling, add the prepared bok choy and blanch for about 10 seconds. Be careful not to overcook, as it will become mushy. Immediately remove the bok choy, rinse briefly in cold water, and drain. For a nice sheen, you can add a tiny drizzle of cooking oil while rinsing.

In the same boiling water, add the sliced shiitake mushrooms and blanch for about 15 seconds. Briefly blanching helps to reduce any earthy flavor and results in a more tender texture.

Heat a little oil in a pan over medium-low heat. Add the minced garlic and sauté until fragrant. Then, add the blanched bok choy, sprinkle a little salt, and stir-fry quickly. Once the bok choy wilts slightly, remove it from the pan and set aside on a separate plate.

Wipe the pan clean or use a fresh one. Add a little more oil and sauté 1 tablespoon of oyster sauce until fragrant. Then, add the blanched shiitake mushrooms and stir-fry for about 30 seconds. Pour in 200ml of water, a little sugar, 1 tablespoon of soy sauce, and 1/2 tablespoon of black pepper powder. Reduce the heat to low and let it simmer until the sauce thickens slightly and coats the mushrooms beautifully.

While the shiitake mushrooms are simmering, arrange the blanched bok choy attractively on a serving plate. This step is optional but adds a nice visual touch to the dish.
