Main Ingredients- 2 cleaned perch
- 1/6 Korean radish (approx. 200g)
- 1 medium potato

Step 1
First, prepare the broth ingredients and vegetables that will form the base of the braised perch. Prepare 2.5 cups of rice water. Cut about 1/6 of a Korean radish (approximately 200g) and peel 1 medium potato. Wash the 2 Korean chili peppers and 1/2 green onion stalk thoroughly. Peel the radish and potato using a peeler and prepare them for cooking.
Step 2
Slice the prepared radish and potato into bite-sized pieces, about 0.6cm thick. Slice the green onion and chili peppers diagonally. This shape allows the seasoning to penetrate well, enhancing the flavor.

In a pot with a lid, lay down a layer of the sliced radish at the bottom. The radish will release its natural sweetness as it cooks and helps prevent the fish from sticking to the bottom.
