  • Eggs, 1-2
  • Peeled and deveined shrimp, 10-12 (thawed if using frozen)
  • Onion, 1/2 medium
  • Korean chili peppers (or jalapeños), 1-2 (optional, for heat)
  • Scallions (or the white parts of leeks), 1 small bunch

Seasoning Sauce

  • Oyster sauce, 2 Tbsp
  • Soy sauce, 1-1.5 Tbsp (adjust to taste)
  • Minced garlic, 1 Tbsp
  • Sesame oil, 0.5 Tbsp
  • Black pepper, a pinch
  • Toasted sesame seeds, a pinch (for garnish and nutty flavor)

Shrimp Marinade

  • Rice wine (or Mirin), 1 Tbsp
  • Salt, a pinch
  • Black pepper, a pinch

Cooking Instructions

Step 1

Start by preparing all your ingredients. Rinse the bean sprouts thoroughly and drain them well. Finely chop the onion and chili peppers. Slice the scallions (or leeks). In a separate bowl, whisk the eggs until well beaten.

Step 1

Step 2

Whisk together all the ingredients for the seasoning sauce in a small bowl: oyster sauce, soy sauce, minced garlic, sesame oil, and a pinch of black pepper. Mix until well combined. Having this ready will speed up the cooking process.

Step 2

Step 3

To enhance the flavor and remove any potential gaminess from the shrimp, marinate them. In a small bowl, combine the shrimp with rice wine (or Mirin), a pinch of salt, and a pinch of black pepper. Gently toss to coat and set aside for a few minutes.

Step 3

Step 4

Heat a wok or large skillet over medium-high heat. Add cooking oil generously.

Step 4

Step 5

Pour the whisked eggs into the heated pan in a thin layer. Reduce the heat to low. As the eggs cook, gently scramble them with a spatula or chopsticks until they form soft curds. Be careful not to overcook them. Once lightly set, remove the scrambled eggs from the pan and set aside on a plate. This ensures a tender texture.

Step 5

Step 6

Using the same pan (add a touch more oil if needed), add the chopped onion. Increase the heat to high and stir-fry the onion for about 1 minute until it becomes translucent and fragrant.

Step 6

Step 7

Add the marinated shrimp to the pan with the onions. Stir-fry for about 4-5 minutes over high heat, or until the shrimp turn pink and are cooked through. Avoid overcooking the shrimp, as they can become tough.

Step 7

Step 8

Once the shrimp are cooked, add the generous handfuls of bean sprouts to the pan. Pour the prepared seasoning sauce evenly over the ingredients. Stir-fry gently until the bean sprouts begin to wilt slightly.

Step 8

Step 9

Finally, add the reserved scrambled eggs, chopped scallions (or leeks), and chili peppers back into the pan. Toss everything together quickly for about 1-2 minutes until well combined. Turn off the heat immediately. Taste and adjust seasoning if necessary, adding a tiny bit more salt if needed. Your delicious Shrimp and Egg Stir-fry is ready to be enjoyed!
