Main Ingredients

  • 2 cups Cham Dream Rice
  • 12 large Shrimp
  • 2 medium Potatoes
  • 2 Tbsp Curry Powder
  • 1 piece (5cm) Carrot
  • 1/4 Onion
  • 2 cups Water

Shrimp Marinade

  • 1/2 Tbsp Gochugaru (Korean chili flakes)
  • 1/2 Tbsp Curry Powder
  • 1 Tbsp Mirin (or cooking sake)
  • 2 pinches Herb Salt

Cooking Instructions

Step 1

1. Prepare Ingredients: Cut the carrot into a 5cm piece. It adds a nice color without needing a large amount.

Step 1

Step 2

– Rinse the rice and soak it for at least 30 minutes. For even softer and more delicious rice, you can soak it overnight.

Step 2

Step 3

2. Chop Vegetables: Dice the onion and carrot into approximately 0.5cm cubes. Peel the potatoes and cut them into larger, roughly 2cm cubes so they are enjoyable to eat with the rice.

Step 3

Step 4

3. Soak Potatoes: Place the cubed potatoes in cold water for about 30 minutes to remove excess starch. This helps prevent the rice from becoming mushy.

Step 4

Step 5

4. Drain Rice: Drain the soaked rice thoroughly in a sieve. Excess water can make the rice too soft.

Step 5

Step 6

5. Marinate Shrimp: In a bowl, combine the cleaned shrimp with all the ‘Shrimp Marinade’ ingredients (gochugaru, curry powder, mirin, herb salt). Mix well to ensure the shrimp are evenly coated.

Step 6

Step 7

6. Start Cooking Rice: In a pot, add the drained rice, starch-removed potatoes, and curry powder. Gently mix everything together, being careful not to break the rice grains or potatoes. Ensure the curry powder is evenly distributed.

Step 7

Step 8

7. High Heat Cooking: Pour in the 2 cups of water and cover the pot. Cook over high heat until the water comes to a boil. Once boiling, proceed to the next step immediately.

Step 8

Step 9

8. Low Heat Cooking: Once the water is boiling vigorously, add the diced carrots and onions. Reduce the heat to low, cover the pot, and continue to cook for about 8 minutes.

Step 9

Step 10

9. Steam the Rice: After 8 minutes, turn off the heat and let the rice steam, covered, for 10 minutes. This resting period allows the rice grains to become perfectly fluffy and flavorful.

Step 10

Step 11

10. Sear Shrimp: While the rice is steaming, heat a pan and sear the marinated shrimp until golden brown. You can do this during the rice steaming time to save effort.

Step 11

Step 12

– Cook the shrimp over medium-low heat until they are plump and slightly browned, making sure the marinade doesn’t burn.

Step 12

Step 13

11. Serve: Arrange the beautifully seared shrimp on top of the perfectly steamed rice. Your Shrimp and Potato Curry Pot Rice, made with Cham Dream Rice, is now ready! It’s a hearty and delicious one-bowl meal perfect for the whole family.
