Shrimp and Seaweed Porridge (Miyeok Juk)

Ingredients- 6 Tbsp dried seaweed (or 1 cup rehydrated seaweed)
- 6-7 shrimp
- 1 packet instant rice (210g)
- 1 liter water (4 cups)
- 1 Tbsp sesame oil or perilla oil
- 2 Tbsp soy sauce for soup
- 1/2 Tbsp salt (or to taste)
- 0.5 Tbsp minced garlic (1/2 tsp)
Cooking Instructions
Step 1
Thaw the frozen shrimp in cold water and rehydrate the dried seaweed. Once the seaweed is rehydrated, drain it thoroughly.
Step 2
Rinse the rehydrated seaweed under running water, scrubbing gently with your hands to remove any impurities or bitterness.
Step 3
Add 1 tablespoon of sesame oil or perilla oil to a pot and heat over medium heat.
Step 4
Add the prepared seaweed and 0.5 tablespoon of minced garlic to the pot. Sauté over medium heat for about 2-3 minutes until fragrant and the seaweed becomes tender.
Step 5
Pour in 2 tablespoons of soy sauce for soup and continue to sauté, allowing the seaweed to absorb the flavor. Then, add 1/2 tablespoon of salt. You can adjust the saltiness to your preference; if you prefer a saltier taste, add a little more.
Step 6
Add 1 liter of water and the unheated packet of instant rice directly to the pot. As the rice cooks and breaks down, it will form the porridge. Gently mash the rice grains with your spoon for a smoother texture.
Step 7
Cover the pot and reduce the heat to medium-low. Let it simmer gently for about 10 minutes, or until the rice has softened and the porridge has reached your desired consistency.
Step 8
Once the porridge has thickened, add the thawed shrimp and cook for another 5 minutes, or until the shrimp are fully cooked and tender. Your delicious Shrimp Seaweed Porridge is now ready!

Serve the porridge in a bowl. Drizzle a little extra sesame oil on top for an enhanced nutty aroma, if desired. Enjoy this comforting and nourishing meal that is gentle on the stomach.
