How to Make Delicious Shrimp and Sweet Potato Curry

Ingredients- 100g Curry powder (store-bought)
- 200g Shrimp, peeled and deveined
- 1 medium Sweet potato
- 1/2 Onion
- 1/2 Zucchini
- 1/2 Carrot
- 3 Tbsp Cooking oil
- 700ml Water
Cooking Instructions
Step 1
First, prepare the vegetables and sweet potato for the curry. Wash the sweet potato thoroughly and dice it into approximately 2-3 cm cubes. Dice the onion, zucchini, and carrot into similar bite-sized pieces for even cooking and appealing presentation.
Step 2
Gently rinse the prepared shrimp under running water and drain them well in a colander. Avoid rinsing for too long, as it can wash away the shrimp’s natural sweetness.
Step 3
Heat 3 tablespoons of cooking oil in a deep pot or pan over medium heat. Add all the prepared vegetables (sweet potato, onion, zucchini, carrot) except for the shrimp. Sauté lightly for about 1-2 minutes, stirring occasionally, to bring out their flavors without browning.
Step 4
Once the onions start to turn translucent, pour in 700ml of water. Then, add the prepared shrimp to the pot. Now all the ingredients are ready to be simmered together!
Step 5
Bring the mixture to a boil over high heat, then reduce the heat to medium-low. Cover the pot and let it simmer until all the ingredients are tender. You’ll know they’re ready when the sweet potato and carrot can be easily pierced with a fork. (Simmer for about 10-15 minutes)
Step 6
When the vegetables are almost fully cooked, reduce the heat to low. Gradually add the curry powder, stirring constantly to ensure it dissolves smoothly and doesn’t clump. It’s best to add it little by little to achieve your desired consistency.
Step 7
Once the curry has thickened and the flavors have melded beautifully with all the ingredients, your delicious shrimp and sweet potato curry is ready! Serve generously over a bowl of hot rice and enjoy. : )
