Salad Ingredients- 9 large shrimp, peeled and deveined
- 1 ripe tomato
- 1/2 medium onion
- 1/2 bell pepper (any color)
- 2 slices of bread (for optional croutons)
Yuzu-Olive Oil Dressing- 4 Tbsp yuzu marmalade (or yuzu extract)
- 4 Tbsp extra virgin olive oil
- 1 Tbsp honey (adjust to taste)
- 1 pinch of salt
- 1 pinch of black pepper, freshly ground

Cooking Instructions
Step 1
Bring a pot of water to a boil. Gently place the shrimp into the boiling water and cook for about 2-3 minutes, or until they turn pink and are just cooked through. Be careful not to overcook them, as they can become tough. Once cooked, immediately remove the shrimp from the boiling water and rinse them under cold water to stop the cooking process. Drain them thoroughly.

Prepare the vegetables for the salad. Wash the tomato and dice it into small, bite-sized pieces (about 1cm cubes). Finely chop the onion and bell pepper. If you find raw onion too pungent, you can soak the chopped onion in cold water for about 10 minutes, then drain it well before adding to the salad.

Now, let’s make the delicious dressing. In a small bowl, combine the yuzu marmalade, extra virgin olive oil, honey, salt, and freshly ground black pepper. Whisk vigorously with a fork or a small whisk until all the ingredients are well emulsified and thoroughly combined.
