Buttery Pan-Seared Shrimp and Vegetable Fried Rice
Even simple fried rice can look stunning depending on the ingredients you pair with it. Today, we’re elevating fried rice by adding pan-seared shrimp cooked in butter. This dish offers a delightful visual appeal and a rich, satisfying flavor, making it a perfect meal.
Main Ingredients- 6 frozen shrimp, thawed
- 1.5 cups cooked rice (warm)
- 1/3 onion
- 1/4 yellow bell pepper
- 1/4 red bell pepper
- 1/5 zucchini
- 1/5 carrot
- 2 stalks scallions
Cooking Instructions
Step 1
Thaw the frozen shrimp by rinsing them under cold running water. Rinsing under running water helps them thaw more quickly and cleanly. After thawing, pat them dry with a paper towel.
Step 2
Prepare the vegetables for the fried rice. Finely dice the carrot, bell peppers, zucchini, and onion into about 0.5cm cubes. Finely chop the scallions to use as a garnish.
Step 3
Melt 1 Tbsp of butter in a heated pan over medium heat. Add the diced onion first and sauté until translucent, releasing its sweetness and aroma. Sautéing the onions first enhances the overall flavor of the fried rice.
Step 4
Once the onion is slightly softened, add the diced bell peppers, carrot, and zucchini. Stir-fry over medium-high heat to maintain the vegetables’ crisp texture.
Step 5
When the vegetables are partially cooked, add 1.5 cups of warm cooked rice and another 1 Tbsp of butter. Gently break up any clumps of rice with a spatula while stir-frying, ensuring the rice is evenly coated with butter for a rich, savory taste.
Step 6
Evenly sprinkle 1.5 Tbsp of curry powder over the ingredients. To prevent clumping, scatter the curry powder among the rice and vegetables while stir-frying, ensuring the seasoning is well distributed.
Step 7
Continue to stir-fry until the rice and vegetables are well combined and slightly toasted, allowing the curry powder to fully infuse the dish. Once everything is well mixed and seasoned, turn off the heat, stir in the chopped scallions, and mix gently for a delicious fried rice.
Step 8
In a separate pan, melt the remaining 2 Tbsp of butter over medium-high heat. Add the thawed shrimp and pan-sear until golden brown and cooked through. Searing shrimp in butter adds incredible flavor and a succulent, firm texture. Cook until both sides are nicely browned.
Step 9
