Main Ingredients- 150g Shrimp
- 7 cloves Garlic
- 1/2 Onion
- 1/2 King Oyster Mushroom
- 1.5 stalks Green Onion
- 2 Eggs
- 2 bowls Cooked Rice

Cooking Instructions
Step 1
First, prepare the aromatics and garnishes. Finely mince the garlic to release its flavor and thinly slice the green onion. In a separate bowl, lightly beat the two eggs, removing any stringy bits (chalaza) for a smoother texture when cooked.

Rinse the shrimp thoroughly under cold water and pat them dry. If using shell-on shrimp, peel them and remove the devein for a cleaner bite. Ensure they are ready to be stir-fried.

Dice the onion and king oyster mushroom into bite-sized pieces for a pleasant texture in your fried rice. Slice the garlic thinly into slivers to maximize its aromatic release. For the eggs, ensure you’ve whisked them well and removed the chalaza.

Heat a wok or large skillet over medium-high heat. Add the perilla oil and grapeseed oil. Once shimmering, add the sliced garlic and sauté for about 30 seconds until fragrant, being careful not to burn it. Add the diced onion, mushrooms, and shrimp to the pan. Stir-fry vigorously over high heat until the shrimp turn pink and opaque, and the vegetables begin to soften.

As soon as the shrimp are cooked through and have turned a lovely pink color, add the two bowls of cooked rice to the skillet. Use your spatula to break up any clumps of rice.

Gently toss and stir-fry the rice with the shrimp and vegetables, ensuring all ingredients are evenly distributed. Continue to stir-fry, allowing the rice grains to become slightly toasted and infused with flavor.

After incorporating the soy sauce, push the rice mixture to one side again. Add a little more grapeseed oil to the empty part of the pan and pour in the beaten eggs. Let the eggs set slightly, then use your spatula to gently scramble them directly in the pan until they are just cooked.

Once the scrambled eggs are cooked, add the chopped green onions to the pan. Stir everything together – the fried rice, the scrambled eggs, and the green onions – ensuring they are well combined.
