Shrimp Fried Rice with Plump Shrimp
Special Shrimp Fried Rice Recipe for Your Daughter Working Full-Time
I made this shrimp fried rice with lots of shrimp for my daughter who works full-time. It’s a delicious fried rice where the mild and savory shrimp pieces pop in your mouth, bringing a burst of flavor. It’s a satisfying and tasty meal.
Ingredients- 240g cocktail shrimp (rinsed and prepared)
- 5 bowls of cooked rice (warm)
- 2 Tbsp minced onion
- 2 Tbsp minced green onion
- 1 Tbsp minced garlic
- 2 Tbsp minced carrot
- 3 Tbsp canola oil
- 2 Tbsp oyster sauce
- 1 Tbsp soy sauce
- 1 Tbsp honey (or sugar)
- Pinch of black pepper
- 1 Tbsp sesame seeds
- 1 Tbsp sesame oil
Cooking Instructions
Step 1
Heat 3 tablespoons of canola oil in a pan over medium heat. Add 1 tablespoon of minced garlic and sauté until fragrant. Be careful not to burn the garlic; sautéing until it turns golden brown will enhance its flavor.
Step 2
Once the garlic is fragrant, add the minced onion, minced green onion, and minced carrot. Increase the heat to medium-high and stir-fry until the vegetables are translucent and release their sweet aroma. Thoroughly sautéing the vegetables brings out their natural sweetness, deepening the flavor of the fried rice.
Step 3
Add the roughly chopped cocktail shrimp and stir-fry until the shrimp turn pink and become plump and firm. Avoid overcooking the shrimp, as they can become tough. Cook just until they are done.
Step 4
When the shrimp are almost cooked, add 2 tablespoons of oyster sauce and a pinch of black pepper. Stir-fry everything together. The umami from the oyster sauce will further enhance the flavors of the shrimp and vegetables.
Step 5
Next, add 5 bowls of warm cooked rice. Pour in 1 tablespoon of soy sauce and 1 tablespoon of honey, and stir-fry to evenly distribute the ingredients. It’s important to gently break apart the rice clumps with a spatula as you stir-fry, ensuring each grain is coated.
Step 6
Once the rice is beautifully stir-fried and coated with the sauce, turn off the heat. Stir in 1 tablespoon of sesame oil and 1 tablespoon of sesame seeds. Serve it nicely in a bowl for an appealing presentation. Your homemade shrimp fried rice, made with love, is ready to be enjoyed!
