Seasonal Grilled Prawns: Perfect Shrimp Cleaning Method & Simple Oven Salt-Grill Recipe
Shrimp are in season right now, and they are so plump and delicious! I bought about 2kg of them. As they say, ‘take advantage of the opportunity,’ so I cleaned and prepared them for grilling last night, making delicious oven-baked salt-grilled prawns! Here’s how to easily enjoy them at home.
Ingredients- 20 fresh, plump shrimp
- 1-2 Tbsp white wine (to remove shrimp odor)
- 1.5 cups coarse salt (for the oven pan base)

Tips for choosing fresh shrimp: Look for shrimp with clear, shiny bodies and firm shells. Now, let’s get started with preparing the shrimp! First, gently rinse the shrimp under running water. Then, using scissors, carefully trim off the shrimp’s whiskers and the sharp rostrum (horn) above its eyes.

Just like in the photo, trimming these parts will make cooking much smoother. Don’t worry, it’s not complicated!
Step 3
Look closely at the back of the shrimp; you’ll see a black vein, the intestine, about 2-3 segments down. Gently remove this vein using a thin skewer. This step ensures a clean, pure shrimp flavor without any grittiness.
Step 4
Finally, remove the transparent ‘water sac’ located in the middle of the shrimp’s tail. Removing this also improves the texture. Rinse them clean one last time under running water, and your shrimp preparation for delicious grilled prawns is complete! See, it’s much easier than you thought, right?

Sprinkle 1-2 tablespoons of white wine evenly over the 20 prepared shrimp. Let them sit on a kitchen towel or in a colander for about 6-7 minutes. The wine will soak in and effectively eliminate any fishy odor from the shrimp.

Line an oven pan with parchment paper. Spread about 1.5 cups of coarse salt evenly over the parchment paper. The salt bed helps the shrimp cook evenly at high temperatures and keeps them moist. Arrange the prepared shrimp in a single layer on top of the salt, making sure they don’t overlap.
Step 7
Place the shrimp in a preheated oven at 210°C (410°F) and bake for about 15 to 17 minutes. Adjust the baking time based on your oven’s specifications. The deliciously grilled shrimp are best enjoyed immediately, or you can let them cool slightly and peel them for a wonderfully tender bite.
