  • 300g Tofu (firm or stew tofu is fine)
  • 3 Eggs
  • 60g Onion (about 1/4 medium onion)
  • 30g Bell Pepper (any color)

Seasoning
  • Pinch of Salt (adjust to taste)

Cooking Instructions

Step 1

Before starting, prepare all your ingredients. Wash and drain the vegetables, and unwrap the tofu.

Step 2

Peel and finely mince the onion. While dicing or slicing is an option, mincing it finely will contribute to a smoother custard texture.

Step 3

Remove the seeds from the bell pepper and mince it finely, similar to the onion. The vibrant colors are not only visually appealing but also add a variety of nutrients.

Step 4

Gently pat the surface of the tofu with paper towels to remove excess moisture. Too much water can make the custard taste bland.

Step 5

If you are using firm tofu, the outer layer might be slightly tough. For a smoother texture, you can thinly slice off about 0.5cm from the edges, or you can use it as is.

Step 6

Mash or finely mince the prepared tofu using a knife or fork. Aim for a consistency where there are no large chunks remaining.

Step 7

Prepare a heatproof dish or pot (like a Korean earthenware pot, ‘ttukbaegi’, or a ramekin) for steaming. Place the mashed tofu, minced bell pepper, minced onion, and the eggs into the dish. (Example: using a ‘ttukbaegi’)

Step 8

Use a spoon or whisk to thoroughly combine all the ingredients in the dish, ensuring the egg mixture is well incorporated with the tofu and vegetables. Add a pinch of salt to season according to your preference. Be careful not to oversalt.

Step 9

Place a larger pot on the stove with some water, and carefully set the tofu and egg mixture dish inside it, creating a double boiler. Bring the water to a boil over high heat, then reduce the heat to low and steam gently for 10 to 15 minutes. Covering the dish will help it cook more evenly and remain moist.

Step 10

The custard is ready when a skewer inserted into the center comes out clean. Carefully remove the dish from the pot and serve on a trivet.
