Silken Tofu and Egg Soup
Simple and Silky Tofu Egg Soup – Perfect for a Light and Nourishing Breakfast!
A wonderfully smooth and comforting soup that glides down easily. This tofu and egg soup is ideal for busy mornings or a light, satisfying dinner. Its delicate texture and mild, savory flavor make it a delight for everyone.
Main Ingredients- 140g Tofu (firm or silken)
- 2 Eggs
- 60g Potato (about 1/2 of a medium potato)
- 1 Green Onion
Soup Seasoning- 3 cups (600ml) Anchovy Broth
- 1 Tbsp Fish Sauce (or Soy Sauce for Soup)
- 0.5 Tbsp Soy Sauce
- 1 tsp Salt
Tofu Marination- 1 pinch Salt
Egg Wash Seasoning- 2 pinches Salt
- A dash of Pepper
- 3 cups (600ml) Anchovy Broth
- 1 Tbsp Fish Sauce (or Soy Sauce for Soup)
- 0.5 Tbsp Soy Sauce
- 1 tsp Salt
Tofu Marination- 1 pinch Salt
Egg Wash Seasoning- 2 pinches Salt

Cooking Instructions
Step 1
Begin by preparing all your ingredients. Peel the potato and measure out approximately 60g. (This is about half of a medium-sized potato).
Step 2
Cut the potato into bite-sized pieces. For a smoother texture and easier swallowing, slice them thinly and flat.
Step 3
Pour the 3 cups (600ml) of prepared anchovy broth into a pot and add the sliced potatoes. Bring to a boil over medium heat and cook for about 5 minutes, or until the potatoes are tender.
Step 4
It’s best to measure your seasonings accurately by leveling them off. (e.g., a leveled tablespoon).
Step 5
While the potatoes are cooking, cut the tofu into cubes and thinly slice the green onion diagonally. Now it’s time to add them to the broth.

Once the broth is boiling, add the cubed tofu and let it simmer for another moment until it heats through. Stir gently to prevent the tofu from breaking apart.

After the tofu has warmed, add the diagonally sliced green onions and simmer for just about 1 minute more. This will infuse the broth with the fresh aroma of the green onions.
Step 8
In a bowl, whisk together the 2 eggs, 2 pinches of salt, and a dash of pepper to create the egg mixture. Slowly drizzle the egg mixture in a circular motion over the simmering soup. Do not stir immediately. Cover the pot and let it cook until the soup comes back to a gentle boil and the egg is set. This technique creates beautifully soft ribbons of egg in your soup!

(Tip) How to make delicious anchovy broth: In 1.5 liters of water, add a handful of dried anchovies for broth, a piece of dried kelp (dashima), 1 green onion stalk, and 1 large onion. Bring to a boil over high heat, then reduce to low heat and simmer for 20-30 minutes until the flavors are well extracted. This broth can be used for about 2 meals and can be stored in the refrigerator.
