  • 3 Fresh Eggs
  • A small amount of Scallions, thinly sliced
  • 1 cup (200ml) Dashi Broth (Kombu Water or Anchovy-Kombu Broth)
  • 2/3 Tbsp Fermented Shrimp Paste (including brine)

Cooking Instructions

First, carefully open the silken tofu package and cut it into large, irregular chunks directly into a pot. Pour in 1 cup of the prepared dashi broth (or stock). Bring to a boil over medium-high heat. At this stage, add 1/2 Tbsp of the shrimp paste brine and let it simmer. This initial addition of brine will infuse the broth with a deep, savory flavor.

Once the tofu begins to boil, use a spoon to gently break apart any large clumps into bite-sized pieces (about 2-3 cm). Be careful not to over-mash the tofu, as this can result in a mushy texture. Aim for tender, bite-sized pieces.

Crack the eggs into a separate bowl. Use a fork or chopsticks to whisk them well, making sure to remove the chalazae (the white, stringy bits). This helps the egg cook more smoothly into the broth, creating delicate ribbons. Gently and slowly drizzle the whisked egg mixture over the simmering tofu. Do not stir immediately; let the egg set for about 30 seconds to 1 minute until it begins to cook.
