Ingredients- 1 block firm tofu (approx. 300-400g)
- 1 Tbsp saeujeot (fermented shrimp) with brine
- 3 cups water (approx. 600ml)
- 1 green chili pepper (e.g., jalapeño or similar)
- 1 red chili pepper
- A small amount of green onion (white part mainly)
- 1/3 Tbsp minced garlic
- 1/2 pack enoki mushrooms
Cooking Instructions
Step 1
First, cut the tofu into three equal pieces, about 1cm thick. It’s best to keep them thick enough so they don’t break apart. Thinly slice the green and red chili peppers diagonally, removing the seeds to keep the colors vibrant. Slice the green onion diagonally as well. Trim the base of the enoki mushrooms and separate them into strands.
Step 2
In a pot, add 3 cups of water (about 600ml) and dissolve 1 tablespoon of saeujeot. Including the brine from the saeujeot will add more depth to the flavor. Once the water starts boiling, add the sliced tofu. As the stew simmers, skim off any foam that rises to the surface. This will ensure a clear and clean broth.
Step 3
Once the tofu has cooked for a bit, add 1/3 tablespoon of minced garlic and let it simmer further. After the garlic aroma has infused into the broth, add the diagonally sliced green and red chili peppers and green onion. Finally, add the enoki mushrooms. Cook for just another moment until the vegetables are slightly softened. Your stew is ready!
