Ingredients
- 1 block silken tofu (approx. 350-400g)
- 1/3 cup tomato sauce (approx. 80-100ml, adjust to taste)
- 3 strips bacon (cut into 1cm pieces)
- A handful of mushrooms (your favorite kind, sliced or chopped)
- 1/4 onion (finely chopped)
- 3 cloves garlic (thinly sliced or minced)
- 1 tbsp olive oil
- Pinch of black pepper (freshly ground is best for flavor)
- Pinch of parsley (dried or fresh, chopped for garnish)
Cooking Instructions
Step 1
First, place the silken tofu on a sieve to drain any excess liquid. Draining well is key to preventing a watery gratin and achieving the best texture. Once drained, slice the silken tofu into uniform slices, about 1 to 1.5 cm thick, and arrange them evenly in an oven-safe gratin dish or baking dish. Slicing them to a moderate thickness will help create nice layers.
Step 2
Heat 1 tablespoon of olive oil in a pan over medium heat. Add the sliced bacon and cook until it becomes slightly crispy and golden brown. Once the bacon has rendered some of its fat, add the thinly sliced garlic and sauté until fragrant, being careful not to burn it. Next, add the chopped onion and mushrooms, and cook until the onions turn translucent and the mushrooms soften. Season with a pinch of black pepper and add the chopped parsley for an aromatic touch.

Evenly spread the sautéed mixture of bacon, mushrooms, and onions over the layer of silken tofu in the dish. Distribute the ingredients so that every bite offers a delightful combination of flavors.

Next, gently spread the tomato sauce evenly over the sautéed ingredients. Be mindful not to use too much sauce, as it can make the dish greasy; aim for a thin, even layer. Feel free to mix in a little ketchup or other favorite sauce if you like.

Finally, generously sprinkle mozzarella cheese over the tomato sauce, covering the surface completely. Ample cheese ensures a wonderfully melty and satisfying topping. Lightly sprinkle chopped parsley over the cheese for a decorative finish. Bake in a preheated oven at 180°C (350°F) for 15 to 20 minutes, or until the cheese is melted, bubbly, and lightly golden brown. Since all the ingredients are already cooked, you’re essentially just melting the cheese and heating everything through. Adjust the baking time based on your oven’s performance.
