Silky Shrimp and Egg Custard

Its incredibly soft, melt-in-your-mouth texture is enhanced by the umami from shrimp paste, while the tender shrimp pieces add a pleasant chew. Main Ingredients- 3 large eggs
- 120ml water (or broth for extra flavor)
- 1 tsp cooking wine (to remove egg odor)
- 1 tsp clear liquid from fermented salted shrimp (for seasoning)
- 2 shrimp (peeled and finely minced)
Cooking Instructions
Step 1
First, crack 3 large eggs into a bowl. Be gentle to avoid excessive foaming.

Add 120ml of water to the eggs. Using a clear broth like anchovy or kelp broth instead of water will add more depth of flavor.

Stir in 1 tsp of cooking wine. This helps to eliminate any potential eggy smell and adds a subtle aroma.

For the essential umami boost, add 1 tsp of the clear liquid from fermented salted shrimp (saeujeot). Make sure to only add the liquid, not the solids, to maintain the silky texture. Adjust the seasoning to your taste.

Whisk everything together gently until the yolks and whites are well combined, but try not to create too much foam. A whisk or chopsticks can be used for this.

For an exceptionally smooth and delicate, pudding-like texture, strain the egg mixture through a fine-mesh sieve one or two times. This removes any undissolved bits, resulting in a silky smooth liquid.

Carefully skim off any remaining bubbles from the surface of the strained egg mixture. Then, place the bowl containing the egg mixture into a pot for double-boiling (steaming over water).

Cover the bowl tightly with a lid or plastic wrap to prevent steam from condensing inside and making the custard watery. If using plastic wrap, poke a small hole or two with a chopstick to allow some steam to escape.

Now, it’s time to steam. Cover the pot and bring the water to a rolling boil over high heat. Once boiling, reduce the heat to low and steam for 10 minutes. This gentle steaming method ensures a tender texture.
Step 10
After 10 minutes, carefully remove the lid. Arrange the minced shrimp attractively on top of the partially set egg custard. Replace the lid and continue to steam over low heat for another 5 minutes. The shrimp will cook and infuse their flavor into the custard.

Finally, check for doneness. Insert a chopstick into the center of the custard. If it comes out clean without any liquid egg mixture attached, your silky shrimp and egg custard is perfectly cooked. Enjoy this delicate dish!
