  • 1 can (approx. 340g) sweet corn, drained well
  • 1/2 medium onion, thinly sliced
  • 1 slice processed cheese
  • 2 cups (approx. 400ml) milk
  • A knob of butter (for sautéing)
  • Salt to taste
  • Black pepper to taste

Cooking Instructions

Step 1

First, thoroughly drain the canned corn using a sieve. Ensure there’s no excess water, as this can dilute the soup’s flavor.

Step 2

Melt a knob of butter in a pan over medium-low heat. Add the thinly sliced onions and sauté until they become translucent and slightly sweet. Sautéing the onions well is key to developing a rich flavor base.

Step 3

Once the onions are softened, add the drained corn to the pan. Continue to sauté with the onions for another 2-3 minutes, allowing the corn’s natural sweetness to enhance.

Step 4

Transfer the sautéed onion and corn mixture to a blender. Add 1/2 cup (approx. 100ml) of milk and blend until completely smooth. If the mixture is too thick, you can add a little more milk to help it blend.

Step 5

Pour the blended mixture back into a clean pot. Add the remaining 1.5 cups (approx. 300ml) of milk. Place the pot over medium-low heat and bring it to a gentle simmer, stirring occasionally.

Step 6

As the soup begins to simmer, add the slice of processed cheese. Stir continuously until the cheese is fully melted and incorporated, making the soup wonderfully creamy and rich. Season with salt and freshly ground black pepper to your preference.

Step 7

Ladle the warm corn chowder into bowls. For a beautiful finish and an extra hint of flavor, sprinkle a pinch of dried parsley on top. This soup is absolutely divine served with crusty bread or croutons!
