- 3 handfuls well-fermented Kimchi
- 1/6 Cucumber
- 3 Tbsp chopped Green Onion
- 1 Tbsp minced Garlic
- 4 cups Cold Water (approx. 800ml)
Seasoning and Broth- 1/3 Tbsp Gochugaru (Korean chili flakes)
- 1/3 Tbsp Sesame Seeds (ground)
- 1/3 Tbsp Sugar
- 5 Ladles Kimchi Juice
- 1/3 Tbsp Sesame Oil
- 1/3 Tbsp Gochugaru (Korean chili flakes)

Cooking Instructions
Step 1
Finely chop the kimchi. In a bowl, combine the chopped kimchi with about 5 ladles of kimchi juice. The kimchi juice adds a wonderful savory depth to the soup.

Wash the cucumber, remove the seeds, and slice it thinly into strips. Add the julienned cucumber to the kimchi mixture. Then, add the chopped green onions and minced garlic.

Now, prepare the seasoning for the soup. Add Gochugaru, ground sesame seeds, and sugar. Mix everything well until combined. Feel free to adjust the amount of seasoning to your personal preference for a perfectly tailored taste.
