Its simple yet clean flavor is excellent, making it a great option even on busy days and a perfect healthy meal.

Ingredients

  • Tofu noodles, 2 packs (approx. 300-400g)
  • King oyster mushrooms, 3 medium
  • Onion, 1/2 medium
  • Garlic, 5 cloves
  • Green chili pepper, 1 (optional, for a touch of spice)
  • Store-bought tomato sauce, 700g (your favorite brand)
  • Salt, to taste
  • Olive oil, 1 Tbsp

Cooking Instructions

Step 1

First, prepare the king oyster mushrooms to be used as pasta noodles. Slice the stems of the king oyster mushrooms lengthwise into approximately 0.5cm thick strips, similar in size to pasta noodles.

Bring a pot of water to a boil and blanch the prepared king oyster mushrooms for about 1-2 minutes. Be careful not to overcook them, as they can become mushy. Immediately drain the blanched mushrooms in a colander and set aside.

Heat 1 Tbsp of olive oil in a deep pan or pot over medium-low heat. Add the thinly sliced garlic cloves and sauté slowly until fragrant. Once the garlic starts to turn golden, add the thinly sliced onion and sauté until translucent. It’s important to manage the heat to prevent the garlic from burning.

Once the onions are well-sautéed and fragrant, pour in the 700g of store-bought tomato sauce and mix well. Bring the sauce to a simmer, then reduce the heat to low and let it cook for about 2-3 minutes to deepen the flavors. Adjust to your desired consistency.

While the sauce is simmering, lightly rinse the 2 packs of tofu noodles under running water and drain them. Add the blanched king oyster mushrooms to the sauce. Gently stir with a spatula to coat the tofu noodles and mushrooms evenly with the sauce.

Once the tofu noodles and mushrooms are well combined with the sauce, season with salt to taste. For a spicy kick, you can add 1 chopped green chili pepper (seeds removed) and stir-fry briefly. Cook until all ingredients are heated through and well combined. Serve immediately. You can also garnish with Parmesan cheese or parsley flakes if desired.
