Rice Ingredients- 2 handfuls (approx. 300g) well-fermented kimchi
- 2 cups short or medium-grain rice (standard measuring cup)
- 2 cups water (equal to the amount of rice)
- 2 handfuls (approx. 100g) crisp bean sprouts
- 1 fresh shiitake mushroom
- 1/4 carrot
- 1 Tbsp sesame oil
Seasoning Sauce- 2 Tbsp soy sauce
- 1 Tbsp red pepper flakes (gochugaru)
- 1 Tbsp oligosaccharide (or honey)
- 1 Tbsp rice wine (mirin)
- 1 tsp toasted sesame seeds
- 4 green onions, finely chopped
- 1 Tbsp sesame oil
- 2 Tbsp soy sauce
- 1 Tbsp red pepper flakes (gochugaru)
- 1 Tbsp oligosaccharide (or honey)
- 1 Tbsp rice wine (mirin)
- 1 tsp toasted sesame seeds
- 4 green onions, finely chopped
- 1 Tbsp sesame oil
Cooking Instructions
Step 1
First, place the rice in your rice cooker and wash it thoroughly under running water. Add 2 cups of water, ensuring the rice-to-water ratio is 1:1 for optimal cooking.
Step 2
Once the rice is washed, add the kimchi (chopped into bite-sized pieces) on top of the rice. Drizzle 1 tablespoon of sesame oil over the kimchi to enhance the aroma and flavor. Then, close the lid and select the standard ‘cook’ or ‘white rice’ setting on your rice cooker. The saltiness of the kimchi can affect the final seasoning, so adjust accordingly.
Step 3
While the rice is cooking, prepare the vegetables. Thinly slice the shiitake mushroom. Peel and julienne the carrot. Rinse the bean sprouts under cold water multiple times until clean, then drain them thoroughly in a colander to remove excess moisture.
Step 4
Now, let’s make the delicious seasoning sauce! In a small bowl, combine 2 tablespoons of soy sauce, 1 tablespoon of red pepper flakes, 1 tablespoon of oligosaccharide, 1 tablespoon of rice wine, 1 teaspoon of toasted sesame seeds, the finely chopped green onions, and finally, 1 tablespoon of sesame oil. Stir everything together until well combined. Feel free to adjust the sauce ingredients to your personal taste.
Step 5
When the rice cooker signals that cooking is complete, gently fluff the rice with a fork or rice paddle. Evenly spread the julienned carrots, sliced shiitake mushrooms, and the drained bean sprouts over the rice. Close the lid again and select the ‘keep warm’ function for 15 minutes. This steaming process will allow the vegetables and bean sprouts to soften slightly and their flavors to infuse into the rice.
Step 6
After 15 minutes, open the rice cooker and gently mix the rice, vegetables, and bean sprouts together with a spatula. Your delicious bean sprout kimchi rice is ready! Serve warm, spooning the flavorful seasoning sauce over the top and mixing it in. The combination of spicy kimchi, refreshing bean sprouts, and savory sauce creates a truly delightful meal. Enjoy this simple yet special dish!
