Pork Bulgogi (Soy Sauce Marinated)
- 600g pork neck
- 5 Tbsp soy sauce
- 4 Tbsp sugar
- 3 Tbsp white wine
- 1 Tbsp minced garlic
- 1 tsp ginger powder
- A pinch of black pepper
- Green onion (optional, for garnish)
- A little water
Savory Doenjang Jjigae
- 500ml water (about 2 cups)
- 1 anchovy-kelp broth pack
- 2 Tbsp doenjang (Korean soybean paste)
- 1/2 Tbsp gochujang (Korean chili paste, optional, for added spice)
- 1 potato (medium-sized)
- 1/3 zucchini
- 1/2 onion
- 500ml water (about 2 cups)
- 1 anchovy-kelp broth pack
- 2 Tbsp doenjang (Korean soybean paste)
- 1/2 Tbsp gochujang (Korean chili paste, optional, for added spice)
- 1 potato (medium-sized)
- 1/3 zucchini
- 1/2 onion
Cooking Instructions
Step 1
First, slice the pork neck into bite-sized pieces. In a bowl, combine the sliced pork with 5 Tbsp soy sauce, 4 Tbsp sugar, 3 Tbsp white wine, 1 Tbsp minced garlic, 1 tsp ginger powder, and a pinch of black pepper. Mix well by hand until the marinade evenly coats the pork. If you like, you can add some chopped green onion. Let the pork marinate for a while.
Step 2
While the pork is marinating, let’s make the delicious doenjang jjigae! In a pot, add 500ml of water and the anchovy-kelp broth pack. Bring it to a boil to create a rich broth. Once boiling, remove the broth pack. Dissolve 2 Tbsp of doenjang and 1/2 Tbsp of gochujang (if you prefer it spicier) into the broth. For a smoother stew, you can strain the doenjang through a sieve before adding it.
Step 3
After dissolving the doenjang and gochujang, add the diced potato, zucchini, and onion to the broth. Cook over medium heat until the potatoes are tender. Once the stew starts boiling, add the marinated pork. Pour in a little water (about 1/4 cup) to ensure it doesn’t get too thick. Cover the pot and let it simmer until the pork is fully cooked. Skim off any foam that rises to the surface for a cleaner taste. Your flavorful doenjang jjigae is ready!
