Braising Ingredients

  • 1 pack pre-peeled quail eggs (approx. 30 eggs)
  • 3 cups water (approx. 540ml)
  • 2 sheets dried kelp (seaweed), palm-sized
  • 1/2 cup soy sauce (approx. 90ml)
  • 3 tablespoons sugar
  • 20 whole garlic cloves
  • 1-2 red or green chili peppers, sliced (optional)

Cooking Instructions

First, rinse the pre-peeled quail eggs under running water and drain them in a colander. In a pot, combine 3 cups of water, 2 sheets of kelp, 20 whole garlic cloves, 1/2 cup of soy sauce, and 3 tablespoons of sugar. Bring to a boil over high heat. (You can add 2 tablespoons of Korean soup soy sauce for extra umami.)

Once the water is boiling vigorously, carefully add the prepared quail eggs. Stir gently with a spatula occasionally to ensure the sauce coats the eggs evenly. Braise for 8 minutes over medium heat.

After about 8 minutes of simmering, the liquid will reduce, and the eggs will start to absorb the flavor. At this point, add thinly sliced chili peppers (red or green chilies) according to your preference for a spicy kick and a beautiful color.

Continue to stir and simmer for another 3 minutes after adding the chilies, then turn off the heat. The soy braised quail eggs will taste even better as they cool down. If you feel the seasoning is not strong enough, add an extra 2-3 tablespoons of soy sauce and simmer for a few more minutes until it reaches your desired taste. Enjoy with a bowl of warm rice!
