  • Water 1.5L (approx. 6 cups)

First, prepare the radish, the key to a clear and refreshing broth. Peel the radish and slice it thinly into about 0.5cm thick pieces. Slicing them thinly is important, as thicker pieces will take longer to cook.

Next, prepare the scallions. Slice the scallions diagonally into about 0.5cm thick pieces. Using mostly the white parts will give the soup a more refreshing flavor.

Pour 1.5 liters of clean water into a pot to make the broth and bring it to a boil over high heat.

Soak the beef in cold water for about 30 minutes to remove excess blood. Removing the blood is crucial for a clean-tasting soup without any gamey odor.

Once the water in the pot is boiling vigorously, add the drained beef.

As soon as you add the beef, foam will start to rise. This foam consists of impurities from the blood and meat, so skim it off thoroughly with a spoon. This step is essential for a clear and clean-tasting broth. Let it simmer for about 10 minutes to partially cook the beef.
