Let’s start by preparing the ingredients for our delicious tortilla sandwich. Get all your fresh ingredients ready.

Wash the cabbage thoroughly and shred it as thinly as possible. Cabbage is especially sweet and delicious in the spring! Don’t be shy about adding plenty of this healthy vegetable.

To ensure a cleaner taste, I briefly blanched the sandwich ham in boiling water (100°C) to remove any impurities. After blanching, rinse it under cold water and drain it well.

Dice the carrot, onion, and ham into bite-sized pieces that are easy to eat and complement the sandwich filling.

Slice the tomato into thick rounds, about 0.5 cm thick. Slicing them too thinly might cause them to break apart when cooked, so aim for a nice, substantial thickness.

In a bowl with some depth, combine the shredded cabbage, diced onion, carrot, and ham. Crack in the 2 eggs, season lightly with salt and pepper, and gently mix everything together. Avoid over-mixing to prevent the eggs from becoming foamy. Ensure the vegetables and egg mixture are well combined.

It’s time to cook the other side! Carefully flip the tortilla over. Now, we’ll add the sandwich fillings to the cooked side. Layer with 1 leaf of lettuce → sliced tomato → 1 slice of cheese → half a string cheese → sprinkle about 1 tablespoon of sugar evenly → and finish with a drizzle of ketchup or your preferred sauce. Doesn’t it look incredibly abundant and appetizing? This is a universally loved snack!
