Ingredients

  • 10 Heirloom Corn on the Cob
  • 1 Tbsp Coarse Salt
  • 2 Tbsp Water

Cooking Instructions

Step 1

First, prepare your delicious heirloom corn. Gently peel away the outer husks of the corn, and carefully remove all the silk strands from between the kernels. Here’s a crucial tip for amazing flavor: to retain the corn’s natural nutty sweetness and ensure it steams up moist and delicious, try not to remove all the husks. Leaving one or two layers of the outer husk, or steaming it with the inner husks attached, will significantly enhance its authentic taste and texture.

Step 1

Step 2

Arrange the prepared corn cobs snugly in a large pot. Now, let’s add the seasoning. Sprinkle 1 tablespoon of coarse salt evenly over the corn. Salt helps to enhance the natural sweetness of the corn, making it even more delightful. Next, pour in enough water to generously cover the corn cobs. The water level should be sufficient to submerge all the corn. While corn is delicious on its own without added salt, a little bit of salt truly elevates its flavor, making it taste much richer than if unsalted.

Step 2

Step 3

It’s time to start cooking! Begin by bringing the water to a rolling boil over high heat on your stove. Once the water is boiling vigorously, reduce the heat to medium. Continue to boil for about 20 minutes, or until you can smell a delightful aroma, similar to that of corn tea brewing. Afterwards, lower the heat to its lowest setting and let it simmer gently for another 5 minutes. This gentle simmering helps to make the corn even more tender and flavorful. If you are cooking a large batch and the pot is quite full, it’s a good idea to gently turn the corn cobs over halfway through the cooking process. This ensures that the heat is distributed evenly, resulting in uniformly cooked corn. (Note: We are not using New Sugar, which is a chemical sweetener, in this recipe to keep the flavor natural.)

Step 3

Step 4

Finally, a tip on the best type of pot to use for boiling corn. Using a pressure cooker can sometimes cause the corn kernels to burst because they can overcook. Therefore, if you desire that wonderfully chewy texture, it’s best to use a large, regular pot – similar to one you might use for stew – and fill it with plenty of water. Boiling corn in this manner is the secret to achieving that perfect, delightful chewy bite. This method results in incredibly satisfyingly chewy and delicious corn, making it an absolute treat!
