Ingredients

  • 2 large eggs
  • 1 cup granulated sugar
  • 1 1/3 cups cake flour (or all-purpose flour)
  • 2 cups desiccated coconut (or shredded coconut)
  • 1 cup milk
  • 2/3 cup vegetable oil
  • 2 teaspoons baking powder (approx. 15g)

Cooking Instructions

Step 1

Preparation time: 15 minutes. Baking time: 40 minutes. Ingredients: 2 eggs, 1 cup sugar, 1 1/3 cups cake flour, 2 cups coconut, 1 cup milk, 2/3 cup vegetable oil, 2 tsp baking powder (15g). Tools: 22 cm round cake pan, parchment paper, silicone spatula.

Step 1

Step 2

In a mixing bowl, add the 2 large eggs and 1 cup of granulated sugar.

Step 2

Step 3

Whisk the egg and sugar mixture vigorously with a whisk or an electric mixer until it becomes light, creamy, and pale yellow. This step incorporates air, making the cake lighter.

Step 3

Step 4

Pour in the 2/3 cup of vegetable oil and 1 cup of milk. Gently mix until just combined.

Step 4

Step 5

Add the 2 cups of desiccated coconut and 1 1/3 cups of cake flour to the wet ingredients. For a smoother batter, you can sift the dry ingredients, but it’s not strictly necessary for this simple recipe.

Step 5

Step 6

Finally, add the 2 teaspoons of baking powder. Gently fold everything together with a whisk or spatula until just combined. Be careful not to overmix, as this can result in a tough cake.

Step 6

Step 7

Pour the creamy coconut batter into the prepared round cake pan lined with parchment paper. Gently tap the pan on the counter a couple of times to evenly distribute the batter and release any large air bubbles.

Step 7

Step 8

Place the cake pan in a preheated oven at 170°C (340°F) and bake for approximately 40 minutes. To check for doneness, insert a skewer or toothpick into the center of the cake; it should come out clean.

Step 8

Step 9

Once baked, remove the cake from the oven and let it cool completely in the pan before inverting it onto a wire rack. For an extra touch, you can lightly dust the cooled cake with shredded coconut or powdered sugar. Enjoy your delicious and fragrant homemade coconut cake!
