Simple Crab and Egg Over Rice
Easy Crab Egg Rice Bowl Made with Imitation Crab: Perfect for Kids’ Meals!
Transform your crab sticks into a culinary delight! Today, I’m sharing a fantastic Chinese-style rice bowl recipe that’s perfect for using up ingredients in your fridge. It’s a wonderful dish for picky eaters too.
Main Ingredients- Imitation crab sticks (e.g., surimi) 80g, shredded into bite-sized pieces
- Eggs 2 large
- Steamed rice 1 bowl, warm
- White part of green onion 1/2 stalk, finely chopped
- Enoki mushrooms 50g, root end trimmed and separated into strands
- Scallions 2 stalks, finely chopped for garnish
Sauce- Beomil Soy Sauce 1 Tbsp (or regular soy sauce)
- Oyster sauce 1/2 Tbsp
- Sugar 1/2 Tbsp
- Mirin (or cooking wine) 1 Tbsp
- Vinegar 1 Tbsp
- Water 80ml
- Cornstarch slurry (1 Tbsp water + 1 Tbsp cornstarch, mixed)
- Beomil Soy Sauce 1 Tbsp (or regular soy sauce)
- Oyster sauce 1/2 Tbsp
- Sugar 1/2 Tbsp
- Mirin (or cooking wine) 1 Tbsp
- Vinegar 1 Tbsp
- Water 80ml
- Cornstarch slurry (1 Tbsp water + 1 Tbsp cornstarch, mixed)
Cooking Instructions
Step 1
Crack the 2 eggs into a bowl and whisk them well. Add the shredded imitation crab sticks, separated enoki mushrooms, and chopped white part of green onion. Mix everything together to create the egg mixture. Lightly oil a heated pan and reduce the heat to low. Pour in the prepared egg mixture and gently scramble it until softly cooked. Avoid overcooking; it should be slightly underdone to maintain a moist and tender texture.
Step 2
In a small saucepan, combine all the sauce ingredients: Beomil Soy Sauce 1 Tbsp, Oyster sauce 1/2 Tbsp, Sugar 1/2 Tbsp, Mirin 1 Tbsp, Vinegar 1 Tbsp, and Water 80ml. Bring to a simmer over medium heat. Once boiling, reduce the heat to low and gradually stir in the cornstarch slurry (1 Tbsp water + 1 Tbsp cornstarch). Continue stirring until the sauce reaches your desired consistency, creating a thickened sauce. Be careful not to make it too thick.
Step 3
Place the warm steamed rice into a serving bowl. Generously spoon the prepared crab and egg scramble over the rice. Drizzle the finished sauce evenly over the rice and eggs.
