Main Ingredients
  • 2 large fresh eggs
  • 1/2 white part of a green onion, finely chopped
  • 4 sticks of imitation crab meat, thinly sliced
  • 1 serving of cooked rice

Delicious Rice Bowl Sauce (for 2-3 servings)
  • 1 cup (200ml) water
  • 2 Tbsp sugar
  • 2 Tbsp mirin (sweet rice wine)
  • 1 Tbsp soy sauce (recommended: light soy sauce)
  • 1 Tbsp oyster sauce
  • 2 Tbsp vinegar

Cornstarch Slurry (for thickening)
  • 1 Tbsp cornstarch
  • 2 Tbsp cold water

Cooking Instructions

Step 1

First, let’s make the delicious rice bowl sauce. In a pot, combine 1 cup of water, 2 Tbsp sugar, 2 Tbsp mirin, 1 Tbsp soy sauce, 1 Tbsp oyster sauce, and 2 Tbsp vinegar. Heat over medium-low heat and stir until the sugar is completely dissolved. Once the sauce starts to simmer, prepare the cornstarch slurry in a small bowl by mixing 1 Tbsp cornstarch with 2 Tbsp cold water until smooth and lump-free. Gradually pour this slurry into the simmering sauce while stirring continuously. Continue stirring until the sauce thickens to a glossy, sweet and sour consistency similar to tangsuyuk (sweet and sour pork) sauce. Once thickened, remove from heat and set aside.

Step 2

Prepare the green onion to add flavor to the rice bowl. Wash the white part of the green onion thoroughly, pat it dry, and finely chop it. The crisp texture and fresh aroma of the white part will enhance the dish’s flavor.

Step 3

Prepare the imitation crab meat, which is a key ingredient. You can either shred the crab sticks by hand or slice them thinly with a knife. This will allow them to blend beautifully with the egg for a softer texture. Be careful not to break them down too finely.

Step 4

Now, let’s make the egg mixture for the rice bowl! In a wide bowl, crack 2 eggs. Add the finely chopped white part of the green onion and the thinly sliced imitation crab meat. Use chopsticks or a whisk to beat the eggs until the yolks and whites are well combined. Gently stir in the prepared green onion and crab meat so they are evenly distributed.

Step 5

Heat a non-stick pan over medium-low heat and add a generous amount of cooking oil. Once the oil is warm, carefully pour the egg and crab mixture into the pan. Cover the pan with a lid and cook over low heat. This method ensures that the bottom of the egg mixture becomes lightly golden brown while the top remains moist and tender. Avoid using high heat, as this can cause it to burn or become dry and rubbery.

Step 6

Gently place the warm cooked rice into a serving bowl. Carefully slide the cooked crab and egg mixture from the pan on top of the rice. Finally, gently reheat the prepared sauce until warm and generously pour it over the rice and the topping. Your delicious Crab & Egg Rice Bowl is now complete!
