Ingredients

  • 350g ripe grapes (seedless grapes are more convenient!)
  • 300g granulated sugar (adjust according to grape sweetness)

Cooking Instructions

Step 1

First, wash the grapes thoroughly under running water. After washing, place them in a colander and let them drain completely until all the water has evaporated. It’s important to dry them well, as excess moisture can cause the syrup to become watery.

Step 1

Step 2

To accurately measure the grape weight, pre-weigh the container (basket) you’ll be using. In this recipe, the basket weighed 284g. Subtracting the basket’s weight from the total weight of grapes and container gives you approximately 350g of grapes.

Step 2

Step 3

Prepare slightly less sugar than the weight of the grapes. Weigh 300g of granulated sugar, excluding the weight of the measuring cup (332g). You can adjust the amount of sugar based on the sweetness of the grapes or your personal preference.

Step 3

Step 4

Place the drained grapes into a glass container (or a glass airtight container) and pour the prepared sugar evenly over them.

Step 4

Step 5

Before closing the lid, gently shake the container to ensure the sugar is evenly distributed among the grape clusters. The mixture might resemble a layered ‘kongsirou’ (steamed bean cake) with grapes and sugar stacked neatly. This allows the sugar to draw out moisture from the grapes, facilitating proper fermentation.
