Main Ingredients

  • 1 stalk of green onion (preferably the white part)
  • Leftover boiled pork (appropriate amount)

Dongpo Pork Sauce (Tablespoon Measurement)

  • 3 Tbsp Soy Sauce
  • 1 Tbsp Brown Sugar
  • 1 Tbsp Mirin (Sweet Rice Wine)
  • 1/2 tsp Black Pepper
  • 1 Tbsp Minced Garlic
  • 1 Tbsp Oligosaccharide (or Corn Syrup)
  • 150ml Water

Cooking Instructions

Step 1

First, let’s prepare the delicious Dongpo pork sauce. In a bowl, combine 3 tablespoons of soy sauce, 1 tablespoon of brown sugar, 1 tablespoon of mirin, 1 tablespoon of minced garlic, 1 tablespoon of oligosaccharide, and 1/2 teaspoon of black pepper. Stir well until everything is smoothly incorporated, ensuring there are no lumps of sugar.

Step 1

Step 2

Add the green onion, cut into large pieces (focusing on the white part for a fragrant aroma), to the prepared sauce mixture. Pour in 150ml of water to adjust the sauce consistency. Your ingredients are now ready!

Step 2

Step 3

Place the Dongpo pork sauce, green onion, and the leftover boiled pork into a pot. Do this while the pot is still cold, before turning on the heat. Cover with a lid and bring to a rolling boil over high heat. Initially, it might seem like there isn’t enough liquid, but as it boils, it will combine with the pork’s natural juices to create a flavorful sauce.

Step 3

Step 4

Once the Dongpo pork sauce begins to boil vigorously, remove the lid and flip the pork over once. This ensures the sauce evenly coats the entire piece of meat. Don’t worry if it looks like it might overflow; this is part of the process where the delicious sauce will thicken.

Step 4

Step 5

After flipping the pork, keep the lid off and continue to simmer over high heat, allowing the sauce to reduce. During this stage, the liquid evaporates, concentrating the sauce’s flavor and allowing it to deeply infuse into the pork. You’ll start to smell the wonderful aroma!

Step 5

Step 6

As the liquid noticeably reduces, lower the heat to medium. This is a crucial step! To prevent the sauce and pork from burning, you’ll need to continuously flip the pork from all sides as it simmers. Even over medium heat, the moisture can evaporate quickly, so keep an eye on it to avoid burning. By frequently turning the pork, the sauce will coat it evenly, leaving you with beautifully glazed meat, just like in the picture.

Step 6

Step 7

Once the sauce has almost completely reduced and only a glaze remains at the bottom of the pan, turn off the heat. Your delicious pork, infused with Dongpo pork sauce, is ready! Notice the distinct rich brown color and the glossy sheen from the oligosaccharide – it looks incredibly appetizing. Now, simply slice the pork into bite-sized pieces, perhaps slightly thicker for a more satisfying bite. You’ll be so proud to create such a wonderful dish from leftover boiled pork!
