Basic Ingredients

  • 2 eggs
  • 1/2 block firm tofu
  • 2 sheets flat fish cake (eomuk)
  • 1/2 potato
  • 3 Tbsp minced garlic
  • 1/2 Tbsp red pepper flakes (gochugaru)
  • 1 Tbsp fine salt
  • 2 Tbsp anchovy broth
  • 1/2 Tbsp perilla oil (deulgireum)
  • 3 Tbsp chopped green onion
  • 1 Tbsp chopped carrot
  • 1 Tbsp chopped onion
  • 3 Tbsp soup soy sauce (gukganjang)
  • 6 Tbsp braising soy sauce (jorim ganjang)

Cooking Instructions

Step 1

Prepare three small earthenware pots. For the [Steamed Egg Earthenware Pot], crack 2 eggs into the pot and whisk them well. Add 1 Tbsp chopped onion, 1 Tbsp chopped carrot, and 1 Tbsp chopped green onion, and mix. Season with 1/2 Tbsp fine salt and 1/2 Tbsp anchovy broth. Add 1 cup (approx. 200ml) of water. Place this pot inside a larger pot filled with water (double boiler method) and cook over heat. You can start with high heat.

Next is the [Braised Tofu Earthenware Pot]. Cut the firm tofu into bite-sized cubes (about 2cm thick) and place them in another earthenware pot. For the sauce, mix 1 cup (approx. 200ml) of water with 3 Tbsp braising soy sauce, 1 Tbsp soup soy sauce, 1/2 Tbsp red pepper flakes, minced garlic, and chopped green onion. Pour this sauce over the tofu in the pot. Start by simmering over medium heat. If the sauce begins to boil over, reduce the heat to low and let it simmer gently. Cook until the tofu has absorbed the flavors.

Let’s make the [Braised Fish Cake Earthenware Pot]. Cut the flat fish cakes into bite-sized pieces (about 2-3cm) and dice the potato into similar-sized cubes. Place them in the third earthenware pot. You can follow the same method as the braised tofu. Use the same sauce ratio as the braised tofu, adjusting the seasoning to your preference. Cook over medium heat until the potatoes are tender and the flavors have melded together. Once all three earthenware pot dishes are ready, serve them warm for the best taste.
