Quick and Easy Egg Chive Pancake Using Leftover Chives!
Got leftover chives? Transform them into this simple and delicious Egg Chive Pancake! It’s a fantastic side dish or snack made with minimal ingredients.
Main Ingredients- 5 eggs (adjust quantity based on egg size)
- 1 handful of chives (about 50g)
- A little cooking oil (for greasing the pan)
Seasoning- A pinch of salt (to taste, approx. 1/4 tsp)

Cooking Instructions
Step 1
You can adjust the number of eggs based on their size. About 5 small eggs will make a generous pancake. If your eggs are large, 4 might be sufficient.
Step 2
Crack the 5 eggs into a large bowl. Add just a tiny pinch of salt for seasoning. Since it will be dipped in soy sauce, about two pinches of salt (approximately 1/4 teaspoon) is usually enough. Whisk the eggs gently until just combined, avoiding too much foam.

Wash the chives thoroughly and cut them into lengths of about 5-7 cm. Dip the cut chives into the whisked egg mixture, ensuring each strand is well coated with egg.

Heat a frying pan over medium heat and add a moderate amount of cooking oil. Carefully place the egg-coated chives into the hot pan, spreading them out. Be mindful of the heat; too high a flame can burn the egg.
Step 5
Using a spatula or the back of a spoon, gently push the chives towards the edges of the pan. This helps to distribute the chives evenly across the pan, creating a more visually appealing pancake.
Step 6
Once the bottom of the pancake turns golden brown and looks set, carefully flip it over using a spatula. It’s important to flip quickly but gently to prevent the chives from falling apart.

Cook the other side until it’s also golden brown. Your delicious Egg Chive Pancake is ready! Cut it into bite-sized pieces (triangles or squares) and serve. Alternatively, you can tear it into rustic pieces with chopsticks right off the pan for a more casual experience. Serve with a dipping sauce made of soy sauce, a splash of vinegar, and a pinch of chili powder for an extra kick.
