- 1 Tbsp soup soy sauce

- 1L water
- 1 Tbsp soup soy sauce
- 1 Tbsp anchovy sauce
- 1 Tbsp minced garlic
- Salt to taste (for adjusting seasoning)
Cooking Instructions
Step 1
Any kind of dumpling will work perfectly! Prepare 12 dumplings – kimchi, meat, or whichever you prefer or have on hand. Frozen dumplings can be used directly without thawing.
Step 2
Crack 2-3 eggs into a bowl. Gently whisk them with a fork or chopsticks until the yolk and white are well combined. Avoid whisking too vigorously; removing the chalaza (egg white strands) will result in a cleaner egg ribbon.
Step 3
Wash the green onion and thinly slice both the white and green parts. Thinly slice the onion and julienne the carrot to a similar thickness. The carrot adds color, but you don’t need a large amount.
Step 4
In a deep pot, pour 1L of water. Add 1 Tbsp of soup soy sauce and 1 Tbsp of anchovy sauce. This pre-seasoning creates a deep, clean flavor even without a separate broth. Start heating over high heat until the liquid comes to a rolling boil.
Step 5
Once the broth is boiling rapidly, reduce the heat to medium. Add the 12 dumplings, the julienned onion and carrot, and 1 Tbsp of minced garlic. Adding garlic will deepen the flavor and make the broth more refreshing.
Step 6
When the soup starts boiling again, slowly drizzle the whisked eggs in a circular motion around the edges of the pot. As the egg cooks and floats to the surface, gently stir with chopsticks to create delicate egg ribbons. Avoid over-stirring.
Step 7
Taste the soup and add a little salt if needed to adjust the seasoning to your preference. While the soup soy sauce and anchovy sauce provide good umami, adjusting with salt is key for personal taste.
Step 8
After adjusting the seasoning, check if the dumplings are cooked through. Gently break open 2-3 dumplings with chopsticks. This allows the delicious filling to disperse into the broth, enhancing its richness.
Step 9
Finally, add the sliced green onion and let it simmer for another minute. The fresh aroma of the green onion will infuse the broth, elevating the dumpling soup’s flavor. Turn off the heat and serve in a bowl for a delicious egg and dumpling soup!
Step 10
If you prefer a spicier kick, try adding thinly sliced Cheongyang chili peppers or a pinch of red pepper flakes. The spicy broth will whet your appetite, offering a different, delightful variation of dumpling soup.
