Simple Egg Donburi (Tenshinhan Style)
Quick & Easy Chinese-Style Egg Over Rice

Discover Tenshinhan, a delightful Chinese-inspired Japanese dish that’s surprisingly simple to make at home! This ‘egg over rice’ bowl, drizzled with a savory sauce, is perfect for a quick and satisfying meal, especially for breakfast. Its name might sound complex, but the preparation is incredibly straightforward.
Main Ingredients- 1 bowl cooked rice
- 2 eggs
- 3-4 imitation crab sticks (kani kama)
- A little chopped green onion
Cooking Instructions
Step 1
Start by preparing the sauce. In a pot or wok, combine 200ml water, 1 Tbsp soy sauce, 1/3 Tbsp chicken stock (or oyster sauce/soup soy sauce), 1 Tbsp mirin, and 1 Tbsp cornstarch. Whisk well with a whisk or fork until all ingredients are fully dissolved. (If you don’t have chicken stock, oyster sauce or soup soy sauce can be used as a substitute.)

Step 2
Place the pot over medium heat and bring the sauce to a simmer. As it heats up, whisk continuously to prevent the cornstarch from clumping. Cook for 1-2 minutes until the sauce thickens to your desired consistency.

Step 3
Once the sauce has thickened, remove it from the heat. Stir in 1 Tbsp of vinegar. The vinegar adds a wonderful balance of flavor.

Step 4
In a separate bowl, crack the 2 eggs and add a pinch of salt. Beat them well to create an egg mixture. Shred the imitation crab sticks and finely chop the green onions, then add them to the beaten eggs and mix everything together.

Heat a lightly oiled pan over medium-low heat. Pour the egg and crab mixture into the pan. Sprinkle the chopped green onions evenly over the top. Cook gently until the edges begin to set.

Step 6
Before the egg is fully cooked, use chopsticks or a spatula to gently stir and scramble the mixture in the pan. This creates a fluffy, soft texture. Turn off the heat when the egg is about 70-80% cooked; the residual heat will finish cooking it.

Step 7
Spoon the warm cooked rice into a serving bowl. For a neater presentation, you can press the rice into a smaller bowl or mold before inverting it onto the serving dish.

Carefully place the cooked egg and crab mixture on top of the rice.
