Simple Egg Tteokbokki Recipe: A Satisfying Meal Even Kids Love

I saw this on TV and it looked so simple that I had to try it immediately! This ‘Egg Tteokbokki’ is made with just a few basic ingredients like rice cakes, eggs, and onions, and it’s incredibly delicious. My child absolutely loved it! You have to give this recipe a try. ^^ It’s a magical dish that’s perfect for a kids’ snack or a hearty meal.
Egg Tteokbokki- 200g Rice Tteokbokki Cakes (We recommend rice cakes for a chewy texture)
- 1 Onion (medium size)
- 0.5 Tbsp Butter (adds richness)
- 0.5 Tbsp Olive Oil (prevents ingredients from sticking)
- 2 Eggs
- Salt to taste (adjust according to your preference)
- Pinch of Pepper (enhances flavor)
Cooking Instructions
Step 1
First, prepare 200g of tteokbokki rice cakes. Bring a pot of water to a boil, add the rice cakes, and blanch them for about 2-3 minutes until they become tender. This step prevents the rice cakes from becoming too soft or hard later on.
Step 2
Wash and peel the onion. Then, thinly slice it into fine julienne strips. One medium-sized onion is sufficient, but feel free to add more if you enjoy a sweeter onion flavor.
Step 3
Heat a pot over medium heat and add 0.5 Tbsp of olive oil and 0.5 Tbsp of butter. Add the sliced onions and sauté. Once the onions become translucent, season them with a pinch of salt and pepper. Continue to cook until they turn a light golden brown. This caramelization process adds sweetness and depth of flavor.
Step 4
Once the onions are well-sautéed, add the blanched rice cakes to the pot. Drizzle in a little more olive oil. Stir-fry the rice cakes, ensuring they don’t stick to the bottom of the pot. Add a little more salt and pepper to season.
Step 5
Now it’s time for the eggs. Crack 2 eggs into a bowl, add a pinch of salt, and whisk them lightly until slightly frothy. Pour the beaten eggs evenly over the sautéed rice cakes and onions. Immediately cover the pot with a lid. Steaming the eggs will help them cook gently and become wonderfully soft.
Step 6
You’ll see the egg mixture starting to set around the edges of the pot. Once the edges are cooked, lift the lid and gently stir the rice cakes and eggs with chopsticks or a spatula until the eggs are cooked through and form soft curds. Taste and adjust the seasoning with salt if needed. Your delicious Egg Tteokbokki is now complete!
