- Olive oil: 1 Tbsp (for boiling water)
- Ripe tomatoes: 2 medium
- Onion: 1/2 medium
- Minced garlic: 1 Tbsp
- Jarred tomato sauce: 1 bottle (approx. 300-400g)
- Olive oil: 1 Tbsp (for sautéing)
- Olive oil: for drizzling (for garnish)
- Ground black pepper
- Dried parsley flakes
- Baby greens (for garnish)
Cooking Instructions
Step 1
First, bring a large pot of water to a rolling boil. Add 2/3 Tbsp of coarse salt and 1 Tbsp of olive oil to the boiling water. Carefully add 160g of spaghetti noodles and cook according to package directions, or for about 8-10 minutes, until al dente. Once cooked, drain the pasta and toss it with a little olive oil to prevent it from sticking together. Set aside while you prepare the sauce.
Step 2
To create a rich sauce, heat 1 Tbsp of olive oil in a frying pan over medium heat. Add the chopped onion and cook until softened and translucent, about 3-5 minutes. Then, add the chopped ripe tomatoes and minced garlic. Sauté for another 2-3 minutes until fragrant. Pour in the entire bottle of jarred tomato sauce, stir well, and bring to a simmer. Let it cook gently for about 5 minutes, allowing the flavors to meld and the sauce to thicken slightly.
Step 3
Arrange the cooked spaghetti noodles attractively on serving plates. Spoon a generous amount of the warm tomato sauce over the top of each pasta serving. You can gently toss the pasta with the sauce for better distribution if desired.
Step 4
Garnish the spaghetti with a handful of fresh baby greens for a vibrant contrast. Finish by freshly grinding black pepper over the dish and sprinkling with dried parsley flakes. Feel free to add other fresh herbs like basil, or even thinly sliced chili peppers, for an extra kick of flavor and aroma!
