- 1 pack Enoki mushrooms (trim the base)
- 90g Bacon (about 4-5 slices)
- A little chopped scallion or spicy green chili (for garnish, optional)
Cooking Instructions

First, gently pat the bacon slices with a paper towel to remove any excess moisture. Then, cut each bacon slice in half lengthwise. This will make it easier to roll the enoki mushrooms.

Carefully trim the tough, woody base of the enoki mushrooms. Gently separate the mushrooms into smaller, bite-sized clusters that will fit within one piece of bacon. Be gentle, as enoki mushrooms can break easily.

Now, let’s start rolling! Place a cluster of enoki mushrooms onto one half of a bacon slice. Tightly roll the bacon around the enoki mushrooms, ensuring a snug fit. Remember, bacon shrinks as it cooks, so roll it firmly to prevent the enoki from falling out. Adjust the amount of enoki mushrooms according to your preference.
